Undhiyu is
Gujarati’s favorite. Undhiyu is pure Gujarati spicy recipe. In festival of Makarsakranti also know as
Uttarayan Gujarati make Undhiyu. It’s some kind of mix vegetable recipe with
Fenugreek Leaves (Methi) Muthiya.
Special at winter season when all vegetables are available Undhiyu make
so delicious.
Ingredients
to make Undhiyu Recipe:
Garlic leaf (green): 6 to 8
Baby Brinjal: 3 to 4
Potatoes (small): 6 to 8
Broad beans: 25 to 30
Bananas: 2
Green chills: 6
Fenugreek Leaves (methi): 150 grams
Lilva Daba: 100 grams
Sweet Potatoes: 100 grams
Yam (Suran): 100 grams
Tuver Dana: 50 grams
Sugar: 30 grams
Emli : 10 grams
Dhania: 3 grams
Jeera: 5 grams
Oil: 1 small bowl
Scrape Coconut: 2 Table-spoons
Turmeric powder 1 Table-spoons
Coriander leaves: 1 cup
Gram Flour (Besan): 1/2 cup
Ginger: 2 small pieces
Mustard: 1 Tea-spoons
Jeera: 1 Tea-spoons
Jawain: 1 Tea-spoons
Water: 2 cup
Wheat flour: 1 cup
Asafoetida: a pinch
Salt as per taste
Method
for How to make cook Undhiyu Recipe:
Step-1: Firstly we make the muthiya. For it mix ½ cup Gram Flour(Besan) , Wheat flour, some Fenugreek Leaves (methi), 1 piece Ginger , 2 chiles, Dhania, Jeera, salt , water make thick dough.
Step-2: make small roll of dough of muthiya.
Step-3: take pan burn oil and fry roll of muthiya.
Step-4: wash all vegetables.
Step-5: make a paste of ½ cup Gram Flour (Besan) , ginger , 2 chilies , garlic , cut coriander.
Step-6: Stuff the mixture in potatoes and brinjals.
Step-7: cut the bens.
Step-8: Take a handhi , heat oil , mix in asafoetida and mustard seeds.
Step-9: when mustard seeds crackle add ground masala and cutting beans.
Step-10: add all other vegetables and stir.
Step-11: Add salt and turmeric powder, fry on high temperature for 5 min.
Step-12: Add 1 cup water, stir, cover and boil on low heat for 10-15 min.
Step-13: Add fry muthiya and cook for 15 min.
Step-14: shudder the undhiya after some time.
Step-15: Garnish with coconut,coriander leaves ,bens and serve it.
