Khandvi is all Guajarati’s
all time favorite snakes; it’s a make from besan with Mustard Seeds and Sesame Seeds,
decorated with Curry Leaves. If you are bored with your daily snakes try
khandvi with garlic chutney or khajur chutney.
Ingredients for Khandvi Recipe
Gram Flour (besan): 1/2
cup
Sour Buttermilk: 1 cup
Coconut Scraped: 2
tablespoons
Coriander Leaves, finely
chopped: 4 tablespoons
Sesame Seeds (til): 1
teaspoon
Mustard Seeds: 1/2
teaspoon
Cumin Seeds: 1/2 teaspoon
Turmeric Powder (haldi): 1/4
teaspoon
Green Chilies (chopped): 3-4
pieces
Curry Leaves: 10-15 leaves
Oil: 2 tablespoons + 2
teaspoons
Salt as per teste
Method How to Make Khandvi
Step
1:
Take a besan, add buttermilk, turmeric powder and salt and mix properly , make
a smooth batter.
Step
2:
Take a plate and smear oil on the surface of plate. Keep plate aside.
Step
3:
Take a heavy pan, cook batter on low flame, and stir it continuously until it
become thick.
Step
4:
When batter is cook, off the gas and spread the batter on oiled plate in thin
layer.
Step
5:
Cool it for 5 minutes and then cut it in shape of stripes. Now roll the
stripes.
Step
6:
Heat little oil, fry mustard seeds, cumin seeds, and curry leaves and green chilies.
After add sesame seeds.
Step
7:
Add this mixture spread to made rolls.
Step
8:
Decorate with coconut and coriander leaves. And serve with garlic chutney.
Additional
Tips:
To check batter is cooked
well or not, take small batter and spread it on small plate. After a minute,
try to peel it if it peel out properly then it assure that batter cooked well.
