In the season of winter when all vegetable
are fresh, make a delicious brinjal stuffed with masala. It called Bharva
Baingan or Stuffed Brinjal which look awesome with chapatti and achar. Bharva
Baingan is Gujarati Kandiyavadi’s favorite recipe also known as Stuffed
Baingan.
Ingredients for Stuffed Baingan, Bharva
Baingan
Small Brinjal (baingan): 125
gram
Coriander Leaves (chopped):
1/4 cup
Onion (chopped): 1 medium
Potato (grated): 1 small
Cumin seeds: 1/2
tablespoon
Turmeric powder: 1/4 tablespoon
Chilli powder: 1 tablespoon
Besan: 1 tablespoon
Tamarind (imli) pulp: 1 tablespoon
Grated jiggery: 1 tablespoon
Chana dal(roasted): 2 tablespoon
Oil: 1 teaspoon
Asafoetida (hing): a pinch
Salt as per your taste
Method How to Cook Stuffed Baingan, Bharva
Baingan
Step
1: Take
a pan, add oil, and add cumin seeds and asafetida.
Step
2: After
seeds sizzled, add onions and close pan until onions get golden brown.
Step
3: Add
potato, turmeric powder, chilli powder and gram flour and mix it well, cooks it
for 2 -3 minutes.
Step 4:
Add the tamarind pulp, jaggery, coriander, chana dal, salt and ½ cup of
water mix it
well.
Step
5: Take
brinjals , criss-cross slits , stuffed the prepared mixture in it.
Step
6: Add
remaining mixture on all brinjals, add salt, and some water cook it for 5
minutes.
Step
7:
Garnish with coriander leaves and serve with chapati and parotha.
